Their
evenings in Paris...
"Merci Beaucoup!! I've learnt more in two hours with you than in all the books I had read before!!"
(Sean Tylers, Portsmouth, England)
"I also want to thank you for the wine tasting. The location with the magnificent view of the river, the delicious wine and excellent and informative discussion made for a delightful experience. Today I signed up for another class."
(Kathleen Bryant, Chicago, IL, USA)
" The classes are held in the upstairs dining room of a lovely cafe overlooking the Seine and Notre Dame. The wine specialist tailors the classes to fit the experience of his clients. I attended the introductory class wherein he gave the most cogent explanation of the
"terroir" as it relates to wine, the differences between French and New World wine cultivation, the origin and meaning of AOC and guided our tasting of delicious
beaujolais, burgundy, and bordeaux wines.
I hope to attend several more of his classes over the next 3 months and urge anyone planning to visit Paris to sign up for at least one session."
(Deborah Kemp, San Francisco, CA, USA)
"Thank you again for the wonderful wine tasting and excellent lunch. Nancy and I much enjoyed ourselves. I've already started telling friends about your place!"
(Kimberly Horning, San Pedro, CA, USA)
"Just wanted to write and tell you what a great time we had at our wine-tasting with you on the first day of our trip - it helped us choose from the wine lists in restaurants for the rest of our stay
inParis! Without your lesson we would have been lost! Thank you so much - we had a great time, and were very impressed with your ability to describe wines to us in English.
Thanks again - next time we visit Paris we will have another tasting with you!"
(Sadie and Nowell Jarnigan, Los Angeles, CA, USA)

"There are many great reasons we love to visit Paris, and certainly high on the list is the outstanding selection of food and wine available throughout the city. With that vast selection comes some complex choices, and an afternoon with entrepreneur Olivier Magny of
O-Chateau.com wine tasting events, really sent us down the road towards understanding and appreciating fine French wine better.
My wife and I enjoyed two different classes with Olivier this past November 2004. The event is casual, and held in an easily
accessible bistro with a magnificent view of the Seine river. The classes are held upstairs in a semi-private portion of the restaurant. All of the guests get time to introduce themselves, and talk about why they came. It makes for a very friendly and private party atmosphere.
After a brief introduction, Olivier begins with explaining the fundamental processes of evaluating your glass of wine. He begins with how and what to look for, then moves on to the "nose" or smell of the wine, and finally, the tasting process and how to evaluate that taste, age the wine, and ultimately, how to determine what food could go best with the wine.
On each occasion, we tasted a very wide range of 7 wines, from dry white, to sweeter desert or foie gras wines through to the richest reds. It is an extensive class, lasting a full 2 hours. There is plenty of time to share comments with your new friends and ask questions. A wonderful touch to the event is the selection of breads or cheeses that Olivier provides during the tasting, selected especially to go with that days wines.
Another important touch to the event is that Olivier selects "bargain" wines, or wines that have exceptional characteristics, but have not been popularized by the wine maisons and exporters, thus, their prices are much lower than comparable "known" wines. We found this particular aspect of the class the most beneficial. It's both simple and easy for a wine host to select $75-$100 a bottle Bordeaux's to taste and know they will be good, it's quite another thing to search out a 7 year old boutique Bergerac for less than $20 that tastes like it costs $100. That's really worth knowing to us.
I think you should really consider holding a couple of hours one afternoon in Paris open for a wine tasting with Olivier. I believe you will find it to be an excellent value for your money and that it becomes a highlight of your memories from your trip to Paris. Bon Voyage."
